Gluten-free citrus cookies

Research shows that approximately 10% of New Zealand’s population (400,000 people) could have some form of intolerance to gluten. The problem is that though people are now aware of the problem they struggle to find food that is gluten free or, even harder, gluten free and palatable. Try this recipe for a tasty alternative... Ingredients
Butter - 350 grams
Sugar - 250 grams
NZB Gluten Free Pastry Mix - 700 grams
Rind 2 Oranges - 5 grams
Rind 2 Lemons - 5 grams

Method
  1. Cream butter and sugar till light
  2. Add rind, mix through
  3. Add baking mix and mix till clear dough
  4. Roll into balls of desired size and flatten slightly
  5. Bake at 180° for approx. 15 minutes (depending on size)
