For any bakery, the consequences of a lapse in food safety can be devastating. Government-approved Food Safety Programmes will become compulsory for all bakeries and cafes in the near future. In the meantime, many wholesale bakery customers and increasing numbers of retail consumers are demanding proof of food safety for themselves. BIANZ's Food Safety Programme has recently been updated and is available to current BIANZ members. It is the most advanced Food Safety Programme for bakeries and cafes in New Zealand. The HACCP-based programme is suited to any bakery or cafe and has the approval and support of the New Zealand Food Safety Authority. It meets all foreseeable official and commercial needs for food safety assurance.
