Do you want to work in an exciting city and China's best Artisan Bakery guided by Global Baker - Dean Brettschneider?

Baker & Spice is Dean's latest project and he is looking for an experienced young craft baker who has cake and pastry skills. You will be working alongside other New Zealanders and Australians within the business and of course working together with local Chinese bakers whom you will guide and train in western style baking. You will be reporting directly to David O'Brien, the bakery director, who is very hands-on within the business. We are a French Cafe and Bakery in CBD Wellington and need experienced and apprentice bakers to join our team in our production site. We are looking for enthusiastic and reliable persons who can reproduce perfectly our methods of baking and can follow a system. Work Type: Full Time (from 11pm to 6am) 5 days /week

Wages: $15/hour (reviewed after 2 months, based on performance and consistency)

 

As a baker your responsibilities are:

  • Prepare products according to recipes
  • Check production schedule to determine variety and quantity of goods to bake.
  • Measure ingredients, using scales
  • Mixe ingredients to form dough or batter by hand or using electric mixer.
  • Cut dough into uniform portions with knife or divider.
  • Mold dough into loaves or desired shapes
  • Place shaped dough in greased or floured pans.
  • Spread or sprinkles topping (seeds)
  • Place pans of dough in proof box to rise.
  • Insert pans of raised dough in oven to bake, using peel.
  • Adjust drafts or thermostatic controls to regulate oven temperature.
  • Remove baked goods from oven and places goods on cooling rack.
  • Sorting production area orders out at start of day.
  • Maintains general list of supplies necessary to produce products.
  • Maintains food production records.
  • Attends to day-to-day problems and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual conditions.
  • Performs miscellaneous job-related duties as assigned.
  • Records inventory of supplies and orders stock from main storeroom; estimates daily and weekly requirements and replenishes items as appropriate
  • Advise/report for the maintenance and care of departmental facilities, equipment, supplies, and materials in a manner which promotes efficiency, health, and safety.
  • Keeps production areas tidy, equipment cleaned, and prepared for use.
  • Keeps backup production supplies prepared for sales staff in case of need.

You have:

·        Knowledge of the types and grades of ingredients used in general pastry and bread baking.

·        Knowledge of the methods and equipment used in baking.

·        Knowledge of health hazards in quantity baking and of effective precautionary measures.

·        Ability to adapt standard recipes as required by variations in quantities requested.

·        Ability to maintain records of output, quantities of ingredients used, and supplies on hand.

·        Ability to work long hours while standing and under conditions of high temperatures.
