Certificate in Baking (Level 3)

The School of Food and Hospitality has a long association with the New Zealand Baking industry and continues to provide training for future bakers and pastry chefs.  The key baking training is included within the one year fulltime Certificate in baking course.  This course incorporates the requirements of the National Certificate in Baking (level 3) and is aimed at taking candidates with little or no experience within the baking industry to the point where they can work successfully as a member of a bakery team.

 

Starting with core components related to bakery safety, hygiene and legislative requirements, the course progressively builds and develops students within a broad range of bakery skills and knowledge including:

  • Cake production
  • Biscuit production
  • Pastry production
  • Bread production
  • Finishing techniques
  • Customer relationship
  • Underpinning theoretical knowledge
  • Bakery science
  • Commodity recognition
  • Budget and cost control

The School is also associated with apprenticeship training for the baking industry through the provision of ‘off-job’ training courses for apprentice bakers working towards National Certificates in Baking to level 4.  School staff also undertake the role of Modern Apprentice Co-ordinator for the region which allows for a close working relationship with local industry.
